Why the African American cuisine came to be known as "Soul Food" ? Probably because the food was an attempt to remain as close to the heart and soul of African heritage and encourage togetherness between all African American souls. What better name then for a cuisine such as that ?
Roots of this cuisine are to be found in the traditional foods of Africa and the adaptations of those foods in the  hard, unfamiliar land and  sparse, poor supplies.
Food born of these circumstances is, how-ever, a far cry from hard and sparse. It is a rich, flavorful and hearty cuisine, followed by many and enjoyed by many more.
